 roasted vegetables

I make this dish at least 2 times a week
It all depends what veggies are on sale.
Cut up some squash(any kind)
sweet potatoes and onions
sometimes I'll add peppers if I can get them for cheap.
drizzle with Olive oil
add some salt and pepper
toss to coat
Cook in the oven at 400 for about 25 minutes
